    Smashed Greek Omelette

    This Smashed Greek Omelette is filled with vibrant colours and wondrous flavours. To serve, top with finely chopped coriander and basil leaves. Prep time: 10 minutes Cook time: 10 minutes Easy Recipe Serves 2

    Ingredients: 1/4 of a large yellow sweet pepper; 1/4 of a large red sweet pepper; 1 slice of cooked ham; 70g feta cheese; 1/2 red onion; 4 tomatoes; 3 eggs; Chilli flakes; Ground black pepper; Coriander; Basil leaves. Recipe: 1. On a chopping board, finely chop: 1/4 of a large yellow sweet pepper; 1/4 of a large red sweet pepper; 1 slice of cooked ham; 70g feta cheese; 1/2 red onion; and coriander. Depending on the size of your tomatoes, you can either leave them how they are or slice them in half. In a small bowl, beat together 3 eggs. 2. In a small frying pan drizzled with oil, start frying the ham; red onions; yellow sweet peppers; and the red sweet peppers. Fry until the ham and onions start to go brown. Take the beaten eggs and add them into the frying pan with the tomatoes; feta cheese; a pinch of chilli flakes and some ground black pepper. Cook the mixture for 5 minutes on low heat. 3. Once the omelette is cooked, take a spatula and use it to make the omelette now look like scrambled eggs.Then cook for another 3-4 minutes. 4. Enjoy and Serve!
