    Wintery Cinnamon Cookies

    With these wintery cinnamon cookies being full of flavour, they are perfect for an afternoon snack during the cold weather.

    Cook time: 18 minutes @170º Fan - 190ºC - 375F - Gas Mark 5

    Easy Recipe

    Makes 12


    Ingredients:

    90g softened, unsalted butter;

    110g caster sugar;

    160g sieved self-raising flour;

    2tsp sieved ground cinnamon;

    1 tsp sieved baking powder;

    1 tsp sieved bicarbonate soda;

    2 tbsp milk or almond milk;

    1 tbsp vanilla extract;

    1 egg



    Recipe:

    1. Heat the oven to 170°C Fan/190°C/ 375° F/Gas Mark 5 and line a baking tray with parchment paper.


    2. In a mixing bowl, mix together: 110g caster sugar; 160g sieved self-raising flour; 2tsp sieved ground cinnamon; 1 tsp sieved baking powder; 1 tsp sieved bicarbonate soda. Once mixed, mix in 90g softened, unsalted butter until crumbly. Then beat in 2 tbsp milk or almond milk; 1 tbsp vanilla extract; and 1 egg.


    3. Spoon the mixture onto a baking tray and bake at 170°C Fan/190°C/375·F/Gas Mark 5 for 18 minutes or until the cookies come off the baking tray clean.


    4. Once cooked, leave to cool on a wire rack.
