    This very berry eaton mess drizzled with raspberry sauce is a delicious mix of berries and meringue, making this a speedy pudding recipe to put together.

    Makes 6



    Ingredients:

    8 meringue nests (100g);

    300ml whipped double cream;

    80g freshly washed blueberries;

    140g freshly washed raspberries


    Recipe:

    1. In a large mixing bowl, crush 8 meringue nests (100g) into quarters and gently mix in 300ml whipped double cream ensuring that the whipped double cream has reached stiff peaks. Then slowly add in 80g of freshly washed blueberries and 140g of freshly washed raspberries.


    2. Spoon the mixture into 6 serving bowls and leave in the fridge to set for at least an hour.
