    Grandma's Easy Peasy Lemon Pie

    You can't go wrong with a classic lemon pie for a summers day. This easy recipe is quite good whilst having a light texture and a sweet flavour.



    Prep time: 20 minutes

    Cook time: 16 minutes @150º Fan - 170ºC - 335F - Gas Mark 3

    Easy Recipe

    Serves 10



    Ingredients:

    300g crushed digestive biscuits;

    90g softened unsalted butter;

    Juice and zest of 3 lemons;

    1 tin condensed milk;

    Yolk of 4 eggs

    20g chocolate sprinkles.



    Recipe:

    1. Make biscuit base by mixing together 300g crushed digestive biscuits and 90g of melted unsalted butter. Scoop the mixture into an oven proof round pie dish.


    2. Using a cold glass gently push the glass into the mixture until smooth and flat.


    3. Place in the oven at 150º Fan - 170ºC - 335F - Gas Mark 3 for 10 minutes. Then take out the oven and leave to cool.


    4. Mix together the juice of 3 lemons and the zest of 3 lemons with 1 tin of condensed milk and the yolk of 4 eggs. Beat the mixture until fully combined.


    5. Then pour over the biscuit base and place in the oven at 150º Fan - 170ºC - 335F - Gas Mark 3 for 6 minutes until the sides become more solid.


    6. Leave on the side to cool.


    7. Once fully cooled, sprinkle 20g of chocolate sprinkles on top.
